Summer is here! And what could be a better way to survive its heat than making homemade ice cream?
The following recipe is a tasty one! Cherry Chocolate Chip Ice Cream
You will need :
- 1 can full fat coconut milk
- 1 1/2 cups pitted cherries + more for mixing
- 2 T maple syrup
- 1/4 cup vegan chocolate chips
Keep your ice cream bowl in the freezer for 18 Hours.
In a blender, mix the coconut milk, 1 1/2 cups cherries and maple syrup. Blend until everything is well mixed.
Pour the contents in an ice cream machine. Turn it on for 15-20 minutes.
Add in the remaining cherries and chocolate chips, when the ice cream looks like it has about 5 minutes left.
The ice cream will be a soft serve consistency. (place it in the freezer for an hour if you like it harder)
In case you don’t have an ice cream maker, you can make this recipe into popsicles as well.
