For the ganache, you’ll need :
- 300g of dark cooking chocolate
- 125ml of thickened cream
- 30g of butter
Preheat your oven to 160C. Choose a 20cm round cake pan and grease it with butter. Line base and side with baking paper.
Mix the brown sugar, milk and butter in a plate and cook in microwave for four to five minutes or until the butter melts.
Whisk the combined flour and cocoa powder into the butter mixture. Whisk in the egg. Pour into the pan. Bake for 55 minutes. Let it cool for 5 minutes before transferring it to a wire rack.
In order to prepare the ganache, mix the chocolate, cream and butter in a microwave-safe bowl. Cook in microwave for 2-3 minutes (stirring every minute).
Use an electric beater to beat the extra butter in a bowl until it becomes creamy. Beat in the icing sugar, malted milk powder and extra milk until fluffy. Beat in 1 1/2 tablespoons ganache.
Let the ganache cool for 1h30 til it becomes thick and glossy.
Use a large knife to cut your cake horizontally into 3 or 4 layers. Place the base on a platter. Spread with one third of the icing. Continue layering then place in the fridge for 1h30.
Spread the ganache over the top and side of your cake. Add Maltesers on top to decorate. Voila!
