I use hand mixer quiet often for my omelettes and i use Immersion Blender for my Queen Cassava cake (blending 3 kinds of milk: Evaporated, Condensed and Coconut, eggs and other ingredients) and for cream soup (you boil sliced vegetables until soft, then cool them down and blend with a bit of a meat broth, add puree back to cooking pot, mix, simmer a bit and then add spices to taste and cover with lid and leave to get the flavours sink in).
