Delicious Strawberry Cheesecake!

I am a big fan of cheesecake! Well -most people are anyways- but I am most of the time lazy to make one because it takes some time and energy!! So lately while I was doing some research on the internet, I came across this great recipe to make strawberry cheesecake without having to do all the baking and filling parts. It’s a deconstructed cheesecake and you layer it in parfait glasses!! The ingredients that you are going to need to make this are as follow:

1 pound (500 g) strawberries;

2 tablespoons sugar; divided;

1 cup (100 g) butter biscuits;

2 tablespoons (28 g) melted butter;

12 ounces (360 g) cream cheese;

1/2 cup (125 ml) sour cream;

2/3 cup (90 g) confectioners` sugar;

1 cup (250 ml) whipping cream;

1 teaspoon almond extract; mint leaves.

Now for the preparation part you need first to:

In a separate bowl slice the strawberries and sprinkle with one tablespoon of sugar. Toss and set aside.

Then mix the melted butter and one tablespoon of sugar with the biscuit crumbs. Mix also  the cream cheese, sour cream, sugar and almond extract.

After that, whip the heavy cream before stiff peaks form, then fold into the cream cheese mixture.

Now, you get to the fun part: Take a glass and place about a table spoon of the crumbs into the bottom.

After you added the crumbs add another layer of the cheesecake filling, then add your sliced strawberries. Repeat this until filling the glass. (Amounts will vary according to how many parfaits you are making, so just adjust accordingly)

Your last task is to place in the fridge for 1/2 hours  to cool. Congratulations, your Strawberry Cheesecake is ready to be served!
