Easy-to-do Recipes to try during the lockdown period 

During the current lockdown period, most of us run to the kitchen to test out new food recipes. While some get inspired by the different online cooking classes that are organized by famous chefs, others manage to come up with new recipes just out of what’s available in their fridge. To assist you in your cooking journey, we are sharing with you some easy-to-do recipes that you can try while stuck at home.

Homemade Oven- roasted potatoes

What do I need?

  • 2 potatoes
  • 1 teaspoon of salt and pepper
  • 4 tablespoons of olive oil
  • 1 pinch of Espelette pepper
  • 1 tablespoon of paprika

How do I prepare it?

Wash your hands with water and soap, then cut the two potatoes in half, then in four pieces. In a bowl, add the olive oil, salt, pepper, paprika, and pepper.

Mix everything up, then put in a baking tray along with covering the potatoes with a piece of baking paper. Bake the potatoes for 30 to 35 minutes at 200°C, while stirring simultaneously.

After that, you can leave the potatoes on grill mode for some additional minutes to end up with crispy results.

Vegan Chocolate Mousse

What do I need?

  • 200 gr of vegan dark chocolate
  • A dash of vegetable milk
  • 200 gr of Chickpeas juice

How do I prepare it?

With an electric whisk, try to beat the chickpea juice until it snows up just like we do with the whites of the eggs. With a dash of vegetable milk, melt the dark chocolate in a double boiler after breaking it into small pieces.

After it cools down, mix the melted chocolate and the chickpeas juice snow with the help of a spatula. Then, leave the mixture for 50 to 60 minutes in the refrigerator before serving it.

Chickpea & vegetables salad

What do I need?

  • 200 gr of chickpeas
  • 2 tablespoons of olive oil
  • 1 eggplant
  • 50 gr of raisins
  • 1 onion
  • 4 carrots
  • 2 zucchini

How do I prepare it?

Cut the onion into slices, then fry it for a few minutes with olive oil. Next, start peeling and cutting the remaining vegetables into small pieces. Then, mix the onion with the carrots, grapes, courgettes, and eggplant, and cook them for at least 10 minutes. After this, add to the mixture the 200 grams of chickpeas and leave in the fridge for at least one hour.
